This recipe is a variation of my Sourdough Discard Pumpkin Cinnamon Rolls and of course those came from my original and beloved Sourdough Discard Cinnamon Rolls. I had a thought one day to create a cinnamon roll flavor inspired by the infamous Starbucks Pumpkin Spice Latte - and once I had the thought I had to make it a reality. While I must admit I am not a PSL girlie (I prefer my coffee unsweetened with just a splash of cream), I do love when the fall drinks roll out and thought it would make for a really fun flavor combination. The espresso flavor in the filling and frosting works really nicely with the pumpkin pie spices and the pumpkin puree.

Ingredients Explained

You can find the full list of ingredients and measurements in the recipe card below.

The ingredients for these rolls are exactly the same as for my original discard pumpkin rolls with the addition of instant espresso or coffee powder in the filling and glaze. I like the Mount Hagen brand because it is freeze-dried and dissolves very easily into cold liquid.

I prefer bread flour (King Arthur is my favorite) for these, but all purpose will work as well. I did find while testing this that I needed about ¼ cup more flour than usual and I think that is due to using a very old, very flat discard as well as using a different brand of pumpkin puree. So keep those variables in mind and don't be afraid to add a touch more flour.

For the pumpkin pie spice, feel free to use a store bought blend or a combination of individual spices that I will list out in the recipe card notes for you.

As a butter lover, I must admit that I love making these with oil too! But they are wonderful either way. I used avocado oil in the batch pictured here and they were so soft and tender.

Step-By-Step Instructions

Don't be intimidated by the amount of steps. You'll make the dough first and then as it rises you can whip together the filling and frosting. Then you just have to shape the rolls and give them their second rise while you preheat the oven and clean up.

This recipe combines the autumnal flavors of pumpkin, espresso, and warm spices into one incredibly cozy bite. With step-by-step photos as well as an easy overnight option so you can have them shaped and ready to bake fresh in the morning!

  • Total Time: 3 hours
  • Yield: 12 cinnamon rolls

Ingredients

cinnamon roll dough

⅓ cup (80 grams) whole milk, warmed to 100-110 degrees

1 egg

⅓ cup (73 grams) brown sugar

2 ¼ teaspoons (7 grams) active dry yeast or instant yeast

½ cup (140 grams) sourdough discard

¾ cup (187 grams) canned pumpkin puree

2 teaspoons (8 grams) vanilla extract or vanilla bean paste

4 tablespoons (2 ounces or 56.5 grams) soft butter or oil

1 teaspoon (3 grams) kosher salt

2 teaspoons (about 4 grams) pumpkin pie spice

3 ¾ cups (450 grams) white bread flour, plus more as needed

filling

6 tablespoons (3 ounces or 85 grams) soft butter

¾ cup brown sugar (about 160 grams), dark is preferred but light will work

1 tablespoon (about 6 grams) pumpkin pie spice

1 teaspoon (about 2.5 grams) instant espresso powder

1 teaspoon (about 4 grams) vanilla extract or vanilla bean paste

⅛ teaspoon kosher salt (a small pinch - optional)

frosting

2 tablespoons (about 30 grams) milk or cream

1 teaspoon (about 2.5 grams) instant espresso powder

2 ounces (about 56 grams) butter, very soft

4 ounces (113 grams) cream cheese, very soft

1 teaspoon (about 4 grams) vanilla extract or vanilla bean paste

2 cups (about 240 grams) powdered sugar

OPTIONAL

12 tablespoons heavy cream (a generous tablespoonful for each roll - you don't have to get too precise here)

Pumpkin Pie Spice

You'll need about 2 tablespoons of pumpkin pie spice for this recipe. If you want to make your own here is a good formula:

3 ½ teaspoons ground cinnamon

1 ½ teaspoon ground ginger

½ teaspoon ground nutmeg

¼ teaspoon ground cloves

¼ teaspoon ground allspice

Instructions

Make the dough:

Place warm milk, egg, sugar, and yeast in mixing bowl. Mix together and let sit for about 5 minutes.

Next, add sourdough starter, pumpkin, oil or butter, and vanilla to mixing bowl and mix to combine.

Next, add flour, salt, and spices, and knead with a dough hook or dough roller for a minute at speed one and then speed two for 5-7 minutes, scraping down the sides if needed. This is meant to be a soft dough, but if you find it to be incredibly sticky and wet, add a little more flour.

Once the dough comes together, cover and let it rise for 1-2 hours until it has doubled in size.

Make the filling:

While dough rises make the filling by combining all filling ingredients in a bowl and mixing and mashing well until a thick paste forms. Make sure your butter is very soft room temperature or this will be difficult.

Shape the rolls:

Place dough onto floured surface and roll to a large rectangle of about 9x13 inches. Spread filling all over the dough and starting on the long side, roll up tightly into a log.

Tip: If dough is very soft you can place it in the refrigerator for about 30 minutes before slicing to make it a bit easier.

Slice into 12 even pieces, trimming the uneven ends if desire.

Second rise and baking:

Place rolls in parchment lined (or well buttered) 9x13 baking dish or a 13x18 half sheet pan. You can give the rolls a bit more room on the larger sheet pan which is nice but both pans work well. Cover dough lightly with plastic wrap or a kitchen towel and let rise until puffy which will take 30 minutes to one hour depending on the warmth of your kitchen.

OPTIONAL overnight instructions:

When rolls have almost finished their 2nd rise at room temperature, you can cover them tightly and place in the refrigerator overnight to bake the next morning. Let the rolls sit at room temp for about 30 minutes before baking the next day.

This is what I always do as it's a great way to get all the work out of the way and just enjoy freshly baked cinnamon rolls and a clean kitchen the next morning. I offer these same instructions on my Sourdough Discard Cinnamon Rolls and people really seem to love that option. It's also great for Thanksgiving or Christmas morning!

Baking the rolls:

Optionally, drizzle a tablespoon of heavy cream on top of each roll just before baking. Bake the rolls in a preheated 350 degree oven for 30-35 minutes until browned and bubbly. You are looking for an internal temperature of 190-200 degrees F. Prepare frosting while they bake.

Make the Espresso Cream Cheese Frosting:

In a mixing bowl, place cream or milk and espresso powder. Stir to dissolve the espresso powder. Add soft butter, soft cream cheese, and vanilla to this mixture. Mix very well with a hand mixer. Add one cup of powdered sugar and continue mixing until creamy before adding second cup of powdered sugar. Mix again until combined and creamy. If you like a thicker frosting add more powdered sugar.

Frosting the rolls:

When rolls are done baking, remove from oven and let cool for 10 minutes before frosting. If you like a thicker frosting, wait until the rolls have cooled for 30-40 minutes before frosting so that it doesn't melt into the rolls as much.

Dust tops with a little extra pumpkin spice if desired.

Notes

If you are using active starter and want to omit the yeast you can, but you will need to allow for much more rising time. I let mine bulk ferment overnight for the first rise, then shape and allow for about 2 hours for the second rise. My kitchen is about 70 degrees. Rising times will vary and be faster if your kitchen is warmer and slower if your kitchen is colder.

If your dough is very sticky you can add a touch more flour to get it to pull away from the sides of the mixer but don't add so much that you have a firm dough ball or you will end up with a dry cinnamon roll.

Frosted cinnamon rolls can be stored in a sealed container at room temperature for up to 2 days. Any longer and they need to be placed in refrigeration.
