Ingredients
Peach Cobbler Filling:
4 tablespoons (2 ounces) unsalted butter
6-8 yellow peaches, peeled and sliced
1 cup light brown sugar
1/4 cup all-purpose flour
1 teaspoon vanilla bean paste or extract
small pinch of salt
1 teaspoon ground cinnamon
Biscuit Topping:
2 cups all purpose flour
1/4 cup light brown sugar
2 teaspoons baking powder
small pinch of salt
1 egg
4 tablespoons (2 ounces) butter, melted
1 cup whole milk
1 teaspoon vanilla extract or paste
Optional Topping:
2 tablespoons granulated sugar
1/4 teaspoon cinnamon
Instructions
Preheat oven to 400 degrees F. Place 4 tablespoons of butter in a 10 or 12 inch cast iron skillet over medium-high heat. Cook until butter has melted and browned slightly. Remove from heat.
In a large mixing bowl, combine peaches, 1/4 cup flour, 1 cup brown sugar, vanilla bean paste, pinch of salt, and cinnamon. Stir well and add to browned butter in skillet.
In the same bowl, make the batter by combining 2 cups flour, 1/4 cup brown sugar, 2 teaspoons baking powder, pinch of salt - mix well. In a small bowl or measuring cup, combine milk, egg, melted butter, and vanilla and mix well. Add this wet mixture to the dry mixture. Stir well to combine and place large spoonfuls all over the peach mixture.
If desired, sprinkle top with the cinnamon-sugar mixture.
Place in preheated oven and bake for 25-30 minutes, until top is lightly browned and the filling is very bubbly.
Remove from oven and let sit at room temperature for 10-15 minutes. Serve warm with vanilla ice cream, whipped cream, or a generous splash of heavy cream right over the top.
