This Apple Butter Snack Cake is an easy one bowl wonder that is moist, full of cozy Fall spices, and such a fun way to use up my homemade slow cooker apple butter!

Ingredients

  • 1/2 cup (4 ounces) butter, melted
  • 3/4 cup apple butter
  • 3/4 cup brown sugar
  • 1 egg plus 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple pie spice
  • 2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt

Topping

2 tablespoons granulated sugar mixed with 1 teaspoon apple pie spice

Instructions

  1. Butter and flour an 8x8 inch square baking pan and set aside.
  2. Preheat oven to 350 degrees F.
  3. In a large mixing bowl add melted butter (I like to just melt it right in the bowl), followed by apple butter, egg and egg yolk, brown sugar, vanilla, and apple pie spice. Whisk to combine. 
  4. Next, add flour, baking powder, baking soda, and salt. Whisk to combine and until there are no more streaks of flour. 
  5. Using a silicone spatula, transfer batter into prepared baking pan and spread into an even layer. Top with apple pie spiced sugar mixture. Bake in preheated oven for 35 minutes or until a cake tester comes out with a few moist crumbs attached.
